From Surplus to Special Feast: KS4 Chefs Turn Donated Pheasant into "KFP"!

Last week, our Key Stage 4 cooking classes had the exciting opportunity to work with a unique new ingredient: fresh pheasant!
The meat was kindly donated to our school by The Bridge, a local charity organization that coordinates surplus food distribution to groups supporting vulnerable communities across Plymouth. By working collaboratively with their partners, The Bridge maximizes impact and builds community resilience. They have been an incredible support to our school this term—helping us reduce food costs significantly by supplying ingredients at a reduced cost and providing fresh vegetables entirely for free.
When The Bridge recently received a large delivery of pheasants and partridges from a local shoot that would have otherwise gone to waste, they offered our cooking department the chance to take some free meat for our students.
To introduce the students to this new type of poultry, the class got creative with a fun twist on KFC and created "KFP"—bite-sized pheasant coated in a savory blend of Southern-style spices.
The dish was a resounding success! Many students really enjoyed the slightly richer, stronger flavor compared to traditional chicken. Oscar said,
"This is the BEST thing we have cooked EVER! I was a bit nervous about trying pheasant at first, but the spices are amazing and it tastes so much better than regular chicken!"
A huge thank you to The Bridge for their continued support, generosity, and for helping us expand our culinary horizons while preventing food waste!
